Porcupine Meatballs

A comfort food. This recipe is flexible for two or twenty.

Ground meat, beef, turkey, chicken or a combination. A half a pound is plenty for two people.

Uncooked rice, about half to two thirds the volume of the meat.

Salt, pepper and basil.

Brooth

Tomato or V8 juice

Mix the ingredients and form balls.

Brown the meatballs in oil (Left over bacon fat is good.) in a pan of sufficient size to hold the meatballs after they have cooked and expanded.

Drain the oil.

Add equal parts brooth and juice to cover the meatballs.

Simmer until the rice is tender.

Serve with cornbread and buttermilk.
