Ginger Snaps



3/4 cup canola oil
1/4 cup molasses
1 cup brown sugar
1 egg
2 2/3 cups all purpose flour
2 t soda
1 t each cinnamon and ginger
1/2 t salt
Sugar for dusting

Mix oil, molasses, and sugar. Add the egg and mix until smooth.

Mix all of the dry ingredients and add to the oil and egg mixture. Mix until well blended.

Form the dough into one inch balls and roll in sugar until covered.

Bake at 375 degrees F for 12 minutes. Makes about 4 dozen cookies.
