Cherry Cobbler

1 15 oz can of sour cherries*

1/2 cup of sugar

5 tablespoons of butter

1/2 cup of sugar

3/4 cup of flour

2 teaspoons of baking power

3/4 cup of milk

1/2 teaspoons almond extract


* I've used blueberries and dried cherries as well: about 1 1/2 cups of fruit plus sugar and in the case of dried cherries, a half cup of water and heated to rehydrate the fruit.

 

Preheat oven to 325° F.

Melt the butter in an ovenproof, 2 quart casserole

Add sugar to fruit and let stand.

Mix remaining ingredients.

Add mixed ingredients to the melted butter.

Pour the fruit into the mixed ingredients without stirring.

Bake 50 to 60 minutes until brown on top.
