1/2 cup coconut oil

3/4 cup sugar

2 eggs

1 1/4 cup cake flout

1 1/4 cup all-purpose flour

1/2 t baking powder

3/4 t salt

1/2 cup milk

1 t vanilla extract

Icing:

2 cups powdered sugar

1 t corn syrup

1 t vanilla

2 T cocoa

Combine and mix well oil and sugar.

Add eggs one at a time mixing well after each.

Combine flours, baking powder, and salt.

Combine milk and vanilla.

Add flour in thirds, alternating with half of milk mixing well after each addition.

Place 1/4 cup of batter on parchament paper leaving two inches between cookies.

Bake at 350 degrees for 18 to 20 minutes.

Cool completely.

Mix powdered sugar, vanilla and corn syrup with 2 T warm water.

Using 1/2 of the icing, coat 1/12 of each cookie. Allow to dry,

Add cocoa and 1 T of warm water to the remaining icing and coat the remaining halves of the cookies.

Makes 12 cookies.
